Warm Mini Meatball Pasta Salad- The Hungry To Happy Challenge

So, feeding time in a house with little ones is not for the weak! When child is hungry, child wants to eat...NOW! It's a race against time. What will come first, the food or the tantrum? Once the tantrum arrives, the likelihood of the food being consumed by said child is -1%. You then have a very grump child for the rest of the day.

So, when I received a voucher to buy Richmond Mini Meatballs to enter the Hungry to Happy challenge, I thought...'mission accepted'! and off I went in a bid to concoct a healthy, filling meal that would be ready in minutes.

I needed a meal that would be tasty, with greens and would fill my hungry brood. Mini Meatball Pasta Salad was the perfect choice for my Rascals:

Mini Meatball Pasta Salad
Time to prepare: 5 minutes   Time to cook: 9minutes
 
 

Ingredients:
80g eliche pasta
1litre boiling water
20 Mini Meatballs
Mixed bag of lettuce
Cherry Tomatos
Red Onion
Red and yellow peppers

Dressing:
Extra virgin olive oil
Balsamic vinegar

Set the oven to 180 degrees
First place the pasta in a pan of boiling water, bring back to the boil and simmer for 9 minutes. While the pasta is boiling, rinse lettuce leaves and tomatos. Tear the lettuce leaves into a manageable size for little mouths and place them, along with the unsliced cherry tomatos into a serving bowl. Next, finely slice one red onion and place into the bowl, then wash and finely slice the red and yellow peppers (taking care to remove the seeds).
Place the mini meatballs on a baking tray and cook for 8 minutes in the centre of the oven
Drain the pasta and throw into the bowl, on top of the salad.
When the meatballs are cooked, remove from the oven, slice some and leave some whole and throw ontop of the pasta.
Finally, drizzle a good two tablespoons of extra virgin olive oil, and then one tablespoon of balsamic vinegar over the whole lot and using serving spoons, throw the mix together, coating all food in the dressing.
Serve with warm French bread as an extra of choice.
